National Homemade Soup Day was earlier this month, but just because we missed it, that doesn’t mean we won’t be sharing a soup recipe with you! When the weather is cold, there’s nothing quite like warm soup, especially if you made it yourself. Pozole is a traditional Mexican soup made with pork and hominy (dried corn), and it’s surprisingly easy to make. When you don’t want to brave the cold to visit your favorite Mexican restaurants in NH, making homemade pozole is the perfect alternative.

Easy Homemade Pozole
Ingredients
- 1 pound pork shoulder, cut into 1-inch pieces
- 1 tablespoon cooking oil
- One onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- ¼ teaspoon each salt and ground black pepper
- 6 cups chicken broth
- Two cans (15 ounces each) of hominy, drained and rinsed
- ½ cup chopped cilantro
- ¼ cup thinly sliced radishes
- ¼ cup crumbled queso fresco (another shredded cheese will do if that’s all you have)
- Lime wedges for serving
Instructions
Heat the oil in a large pot over medium heat. Add the pork and cook, stirring occasionally, until browned on all sides. Add the onion, garlic, cumin, oregano, salt, and pepper to the pot. Cook, stirring constantly, until the vegetables are softened, about five minutes. Add the chicken broth and hominy to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes or until the pork is tender. Stir in the cilantro, radishes, and queso fresco. Serve immediately with lime wedges on the side.

- For a richer flavor, use pork belly instead of pork shoulder.
- If you don’t have time to simmer the pozole for 30 minutes, you can cook it in a pressure cooker for 10 minutes.
