May is a big month for Mexican restaurants in NH. We kick off the month by celebrating Cinco de Mayo, but the celebration doesn’t end there. May is also National Salsa Month! There are also plenty of variations within the types, but the three most common are salsa roja, salsa verde, and pico de gallo.

Salsa Roja

Salsa just means “sauce” in Spanish, so salsa roja is “red sauce.” There are many variations within salsa roja recipes, but the ingredients usually include ripe tomatoes, onions, chili peppers (usually jalepeños or serranos), garlic cilantro, and lime juice. To enhance the flavor, the tomatoes are usually roasted or boiled before being blended with the other ingredients. Roja is the most popular salsa, so it has several varieties, including smooth, chunky, mild, and extra spicy.  

Salsa Verde

Salsa verde gets its green color from tomatillos. People sometimes mistake tomatillos for unripe tomatoes, but they are actually a different fruit. The preparation and ingredients are similar to salsa roja, but the tomatillos give salsa verde a tangy and tart flavor unique to it. While not always the case, salsa verde tends to be smoother and spicier than salsa verde.  

Pico de Gallo

Pico de gallo is different from salsa roja and salsa verde because the ingredients are chopped finely and mixed together but not cooked. Leaving the ingredients raw gives pico de gallo is fresh flavor and crisp texture. Every chef has their own recipe, but the typical ingredients are fresh tomatoes, red onions, chili peppers, cilantro, lime, and salt.
