Instructions:

Start by mashing your avocados. Keep mashing until they reach your desired consistency. There’s no “right” consistency for guacamole—make it as smooth or as chunky as you like. Mix in the lime juice and salt. Keep mixing and add the diced onion, tomato, and whatever else you’re adding to your guacamole. The liquid will keep the air out and prevent the guacamole from browning. When you’re ready to eat the rest, pour the extra liquid off or mix it into the guacamole.

 

The other option is to cover your bowl or container with plastic wrap, but don’t stretch it across the opening. Press the plastic gently against the guacamole, again keeping any air out. When you peel the plastic wrap off a day or so later, your guac will still be fresh and green!
